Orange, Beetroot And Almond Salad
This recipe comes from my Healthy Jewish Cookbook and includes two favourite Jewish ingredients: beetroots, part of Jewish cooking since the fourth century, and almonds which are mentioned in the Old Testament book of Genesis.
The protein and mineral-rich nuts make a perfect companion to the nutrients in beetroot.
4 medium cooked beetroot, cubed
500 ml/18 fl oz fresh orange juice
orange zest
5 tbsp olive oil
75 g/3 oz almonds
Put the beetroot, orange juice, zest and olive oil in a pan and simmer gently for 10 minutes.
Increase heat and boil till most of the liquid is reduced.
Meanwhile dry fry the almonds till just turning brown, about 2 minutes.
Serve the beetroot in its juice, scattered with the almonds.
