Cabbage And Beetroot Soup With Cider Vinegar.
Throughout Europe cabbage is known as the medicine of the poor – and with good reason. It’s rich in vitamin C and antibacterial sulphur as well as containing large amounts of cancer-protective plant chemicals.
Combined here with wonderful beetroot this delicious Polish peasant soup looks good, tastes good and does you good.
1 medium onion, finely chopped
1 clove garlic, finely chopped
450g/1lb raw baby beetroot, diced
1 litre/1 and three-quarter pints vegetable stock
2 tbsp cider vinegar
275g/10oz white cabbage, shredded
8 chives
Sweat onion and garlic in the oil for 5 mins.
Add beetroot and stir for 2 mins. Add stock, simmer until tender, add cider vinegar and blend till smooth.
Return to the pan, scatter the cabbage on top of the soup, cover and simmer gently for 5 mins, till cabbage is cooked but crunchy.
Serve with chives arranged on top.
