Red Onions With Fromage Blanc
As well as all the protective effects of the onions the fromage blanc contains generous amounts of bone building calcium.
4 large red onions, peeled until you reach the shiny flesh
3 tspns – 10ml – cider vinegar
1 tspn brown sugar
half a lemon
150g – 5oz – low-fat fromage blanc
1 tspn Dijon mustard
half a tspn caraway seeds
2 tbspns mixed chives and curly parsley, finely chopped
Heat the oven to 180C/350F/gas4
Cut a slice off the onions so that they stand level
Cut a deep cross in each onion, but make sure they still stay intact
Wrap each onion in an envelope of foil and put in a heat-proof dish in the oven for 50 minutes
Open the envelopes, season with salt and pepper, add the vinegar and sugar and return to the oven for 15 minutes
Squeeze the lemon and mix the juice with the fromage blanc, mustard, caraway and herbs
Take the onions out of the foil and pour the sauce on top
Serve with fried fish, grilled meat or poultry
Sally’s Tip: this simple, healthy sauce is good with most vegetables and plainly cooked fish, meats or poultry.
