Filo Tart Of Cauliflower And Goat's Cheese
This great tart takes less than 45 minutes from start to finish and has the added and unusual ingredient of maple syrup.
Red onions for all the heart protection, low fat goat's cheese for calcium and just as good cold the next day.
400 g (14 oz) cauliflower
4 sheets of ready made filo pastry
1 goat's cheese log
2 red onions
2 tbspns olive oil
4 tbspns maple syrup
salt pepper
Heat oven to 220°C, 425°F, Gas 7
Oil the sheets of filo with a soft brush. Place them one on top of the other in a deep pie dish.
Break the cauliflower into small florets, then cook in boiling water for 10 minutes. Drain a leave to cool a little.
Cut the cheese into rounds and spread over pastry.
Finely chop onions and spread half on goat's cheese, add the cauliflower, salt and pepper
Cover with the rest of the onion.
Pour over the maple syrup.
Bake in the oven for 15 – 20 minutes
