Indian Chard Toasts

To serve as party nibbles you can use diagonally cut slices of toasted French bread but I prefer these as a really delicious and amazingly healthy starter or as a light supper with mixed salad and fresh fruit.

A good mixture of instant and slow release energy, resistance boosting garlic, heart and eye protective lycopene from the tomatoes make this a very simple but extremely healthy dish.

These very simple Indian delights have the wonderful combination of sweetness from the sultana, freshness from the chard and spiciness from the garam masala.

1 tbspn sultanas
1 clove garlic, finely minced
1 tbspn olive oil
275g/10 oz young chard, finely chopped
1 tbspn pine nuts
3 tbspns chopped tomatoes
1 tbspn freshly chopped parsley
Half a tbspn garam masala
2 pieces of naan bread

Cover the sultanas with freshly-boiled water and set aside to stand for 10 minutes.

Mix together the garlic and oil and sauté gently until the garlic is softened.

Add the chard and cook gently until wilted.

Tip in the sultanas, pine nuts, tomatoes, parsley and garam masala and heat through.

Put the naan bread into a warm oven – about 180C/375F/gas mark 4 – for about 5 minutes.

Top the bread with the chard mixture to serve.
